Healthy Greek Garlic Marinated Chicken

Running out of ideas on how to cook your chicken?  Check out this easy to make healthy chicken recipe. This recipe is full of flavor coming from garlic, lime, oregano, and parsley. The chicken only requires a minimum of 30 minutes to marinate and then you have the option to bake or grill.  I chose to bake it this time around. Trust me when I say the chicken will come out super moist and full of flavor. Hope you enjoy it!

Healthy Greek Garlic Marinated Chicken

  • 1 cup plain greek yogurt 
  • 2 Tbsp olive oil 
  • 4 cloves garlic, minced
  • ½ Tbsp dried oregano 
  • 1 medium lime
  • Salt and Pepper to your liking 
  • Fresh parsley 
  • 3-4 lbs of chicken (I had drumsticks) 

  • Mix all the ingredients in either a bowl or a gallon sized ziplock bag. Use a fine holed cheese grater or a zester to scrape the thin layer of zest from the lime skin.  Then squeeze and add the juice from the lime. 

  • Seal the bag and mix all the ingredients until the chicken is fully coated. Try to get as much air out and make sure the seal is nice and tight.  Refrigerate the bag for a minimum of 30 minutes.

  • Preheat oven to 375 degrees F. After marinating for 30 minutes, place in a casserole dish. If you place the extra marinade on top of the chicken it will take longer to cook. I placed aluminum foil just for cleaning purposes. Bake for 45-60 minutes or until golden brown and middle reaches 165 degrees F. 

  • Serve with brown rice, quinoa, or a salad as a side and've just made a healthy meal!
