Carb Loading This Weekend? Try This Delicious Pasta!

Everyone knows carb loading is the way to go a few days before a race.  Finding new and exciting pasta recipes can be a total drag though. Here is an easy pasta recipe that will surely have you asking for more. 

Pesto Asparagus Pasta

The ingredients for the pasta are rather simple.  Total cooking time was about 30 minutes. You start off by making your pasta. I add a bit of olive oil and salt to season. Cook the pasta to the package instructions. 

While the pasta is cooking preheat your oven to 450 degrees F. Roast some asparagus with olive oil, salt and pepper for about 10 minutes.  Let them cool for a bit and then cut into 1 inch pieces. Place to the side and continue meal prepping.

Once the pasta is done cooking, rinse and drain. Combine with the remainder of the ingredients and serve! This recipe is great for a pre-race dinner. I made it on a whim for my husband and it turned out great.

Unfortunately my phone camera sucked at capturing how great my food looked! I promise you it looks better than this. lol.
