Deliciously Moist Banana Chocolate Chip Muffins!

Yesterday in the morning I really noticed how ripe my bananas were getting. I hate to waste food so I knew I needed to either consume these suckers or bake with them. So all day I kept thinking of ingredients I have in my pantry that would make a delicious dessert. I also wanted to make sure it was as healthy as it could be without tasting like cardboard. I settled on making muffins. 

The meal prep is actually pretty simple. I had all the ingredients in my pantry except for baking liners for the muffins. I hadn't replenished them from the last time I made cupcakes. So before coming home from my 12.5 hour shift at the hospital, I stopped at the store to get those. I just got plain ones...nothing fancy.

The ingredients are divided into two groups: wet and dry. I mixed each one separately. The first one I mixed were the oats, baking soda, and baking powder. Pretty simple right? I just used a spoon to mix the dry ingredients together.

The second group was pretty much the remainder of the ingredients (except for the chocolate chips). I used my wonderful stand alone mixer for this one. So in the mixer I combined the bananas, yogurt, honey, and eggs until smooth. 

Next I placed the wet and dry ingredients into a food processor. The oats need to mix really well with the wet ingredients. Once I got a fairly smooth batter, I added the chocolate chips. I just mixed those in with a spoon. 

The final step is lining the muffin pans with baking liners and transfer the batter. Depending on how heavy your pour can make 10-12 muffins. I apparently had a heavy pour because I made 10. My house smelled so good once I placed them in the oven. 

I got the thumbs up from my husband last night and today at work I also got great reviews from co-workers who tried them.  Super easy recipe with no oils or butter used! The honey I used was completely natural honey that I purchased at a local farmer's market on Thursday. Hope you like it...Enjoy!
